Banana Cake
1 hour
6-8 large portions
Ingredients
Method
3 ripe bananas
3 eggs
230g self raising flour
200g caster sugar
200g butter (I use salted butter, more flavour).
1 Tsp baking powder
Preheat oven to 170°C.
Using a fork, mash the bananas on a plate until smooth with small lumps.
Beat the eggs in a small mixing bowl/mug.
Beat the butter and sugar together in a large mixing bowl (I slightly melt the butter first). Add the flour, baking powder, banana and eggs.
Grease a baking tin (mine was roughly 25 x 25cm big) and lightly dust with flour. Pour in the mixture and bake for 20-25 mins until golden brown and cooked through.
Enjoy!
