Baked Pesto Fish & Peppers

30 minutes




6 fish fillets (I used cod, but any white fish or salmon work well)

2 large handfuls of basil leaves

1 lemon (zest and juice)

Half a clove of garlic

3 TBsp pine nuts

80ml olive oil

4 sweet peppers

1 red onion

Salt and pepper


Use a food processor to blend together all the ingredients except the fish until a paste is formed. 

Place the fish in a large baking tray. Drizzle with oil and sprinkle with salt and pepper. Move the fish around so it is totally covered in the oil. 

Cover the fish with a layer of pesto.

Cover with foil and bake for 20 minutes until cooked. 

After 10 minutes, slice the peppers and onion. 

Fry on a medium heat until slightly soft. 

Remove the fish from the oven and serve with the peppers. Enjoy!
