Caramelised Red Onion Tart
4 red onions
1 TBsp sugar
1 Tsp salt and pepper
1 pack roll-out puff pastry
1 ball of mozzarella
Handful of rocket
Preheat oven to 200°C. Peel and slice the onions.
Fry the onions with the sugar, salt and pepper on a low heat for 5 minutes until soft.
Beat the egg.
Lay the pastry flat on a baking tray. Prick all over with a fork and brush with the egg.
Spread the onion over the pastry, leaving a 2cm border. Bake for 10 minutes.
Slice the mozzarella into about 10 pieces.
Remove from the oven. Add the mozzarella and bake for another 10 minutes.
Remove when the pastry is golden and the mozzarella has melted.
Add the rocket on top and serve!
