Cod & Tomato Curry

Ingredients:
4-6 cod fillets
2 onions
3 garlic cloves, crushed
3 Tsp garam masala
1 Tsp tumeric (optional)
Half a Tsp hot chilli powder
1 tin of chopped tomatoes
1 tin of coconut milk
200ml water
150g mangetout OR green beans
Salt and pepper
Topping - spring onion/fresh coriander
Method:
Peel and finely slice the onion.
On a low heat, fry the garlic and onion in butter until soft. When soft, quickly stir in the spices for 1 minute.
Add the chopped tomatoes, coconut milk and water. Season with salt and pepper. Simmer on a low heat for 20 minutes, partly covered.
Cut the cod fillets into chunks (roughly 6cm x 6cm).
Add the mangetout/green beans and simmer for 5 minutes. Add the cod and simmer for another 5 minutes.
Sprinkle over the spring onion and coriander.
Serve immediately and enjoy!
