Easy Spanish Tortilla

Ingredients:
8 eggs
2 onions
2 Tsp butter
700g potatoes (about 5 large potatoes)
1 and a half Tsp salt
Method:
Preheat oven to 200°C. Peel and boil the potatoes for 10 minutes until soft but not crumbly.
Slice the potatoes (roughly 0.5cm thick).
Peel and slice the onions.
Fry the onion for 5 minutes, then add the potatoes and fry for a further 3 minutes.
Beat the eggs with salt, pepper and basil.
Add the potatoes and onions to the eggs and mix.
Warm the butter in a medium frying pan on a medium heat. Add the potato mixture and cook on a low-medium heat for 10 minutes.
Bake in the oven for 5-10 minutes until cooked through. Flip out onto a dish and enjoy!
