Mini Meatball Pasta

Ingredients:
500g beef mince
1 large brown onion
2 garlic cloves
2 tins of chopped tomtoes
600ml water
2 TBsp tomato ketchup (OR 2 Tsp sugar)
2 TBsp mixed herbs
300g dried pasta (I used conchiglie/shells)
Large handful of fresh basil
Salt and pepper
Method:
In a mixing bowl, use your hands to mix (squish) together the beef mince and 1 Tsp each of mixed herbs, salt and pepper.
Roll into about 12 small meatballs.
On a medium heat, fry the meatballs for 6-8 minutes until nicely browned (they do not need to be fully cooked at this point). Set aside on a plate.
Crush the garlic and dice the onion. On a low heat, fry in a drizzle of oil for 10 minutes until soft.
Add the meatballs, chopped tomatoes, water, salt, pepper, 1 TBsp mixed herbs and tomato ketchup to the pan. Simmer for 5 minutes.
Add the dried pasta and simmer for 15-20 minutes until the pasta is soft and cooked through (add the chopped basil 5 minutes before the end). Enjoy!
