Simple Spanish Baked Chicken

1 whole chicken

3-4 brown onions

3-4 TBsp chosen spice imx (I used Mediterranean spice mix)

4 garlic cloves, crushed

Salt and pepper


Preheat oven to 180°C.

Use chunky kitchen scissors to cut the whole chicken in half down its backbone (or just buy pre-cut chicken thighs, legs an breast).

Quarter the onions and place them and the chicken in a roasting tray. Drizzle with oil on both sides.

Spread over salt, pepper and your chosen spices generously.

Rub the spices into the chicken on both sides.

Bake for 20-30 minutes until cooked through and juicy. Serve!
