Ingredients:

2 garlic cloves, crushed

1 brown onion

Half a packet of mangetout

1 orange pepper (OR red)

1 TBsp mixed herbs

1 chicken stock cube

500g turkey mince

4 thick slices of halloumi

Hndful of fresh coriander

Salt and pepper

Method:

Preheat grill to the high setting.


Dice the pper and onion. Fry with the garlic on a low heat in a large frying pan for 6-8 minutes with oil and a splash of water. Set the vegetables aside onto a plate.


Add some oil and the turkey mince. Fry for 10 minutes.


Roughly chop the coriander. Add 400ml boiling water, stock cube and the vegetables back in with the rest along with the mixed herbs and season well with salt and pepper. Simmer for 10 minutes.


Spread the turkey mixture into a medium baking dish (approx 15cm x 22cm). Lay over the halloumi slices on top and grill for 4-6 minutes until golden. Sprinkle over the coriander and enjoy!
