Ingredients:

4 medium avocados

15-20 cherry tomatoes

Quarter of a red onion

1 spring onion

Handful of coriander

2 TBsp lemon/lime juice (according to taste)

2 TBsp olive oil

Salt and pepper

Method:

Peel the avocados, remove the stones and dice into small-ish chunks.


Quarter the cherry tomatoes. Finely chop the red onion, spring onion and coriander.


Add everything into a big bowl and mix well, seasoning with salt and pepper. (I slightly mush up the mixture so it's easier to pick up using tortillas.) Enjoy!
