Beans, Avo & Egg on Toast
2 pieces of bread
Half a can of baked beans
Half a red onion
Half an avocado
Salt & pepper
1 TBsp butter (for the toast)
Peel & slice the avocado & red onion.
In a small frying pan, add the red onion and fry on low heat with a teaspoon of oil for 5-6 mins until soft, then set aside on a plate. Add the baked beans to the pan and simmer for 3-4 mins until bubbling. Set aside.
In a small saucepan filled with boiling water, crack an egg into the water and poach for 3-4 mins until the white is cooked and opaque (the yolk should still be runny!)
Toast the bread and spread over butter. Pour over the beans, onion and top with the avocado, poached egg. Sprinkle over salt & pepper and enjoy!
