Coronation Potato Salad
3 large potatoes
Quarter of a red onion
Handful of fresh coriander
2 TBsp sultanas/raisins
Salt and pepper
2 TBsp light mayonnaise
2 TBsp natural yoghurt
1 TBsp lemon juice
1 heaped Tsp medium curry powder
Half a Tsp tumeric (optional)
Optional side - salad leaves
Wash the potatoes and then dice them into roughly 2cm x 2cm chunks. Boil in water for 10-12 minutes until soft but not mushy.
In a large bowl, mix together the mayonnaise, yoghurt, lemon juice, curry powder and tumeric with a generous seasoning of salt and pepper.
Finely chop the coriander and finely dice the red onion.
When the potatoes are cooked, drain in cold water. Then mix them into the large bowl with the mayonnaise mixture.
Add the coriander and red onion. Toss gently, then serve with salad leaves and enjoy!
