Courgette & Feta Quinoa

Ingredients:
2 garlic cloves, crushed
1 onion (red or brown)
1 small courgette
10 medium mushrooms
Big handful of fresh coriander
Salt and pepper
1 Tsp paprika
100g block of feta cheese
1 vegetable stock cube
100g quinoa
Method:
Slice the mushrooms and onion. Dice the courgette. Add both to a large frying pan with the garlic, paprika and some oil. Fry on a low heat for 10 minutes. Season with salt and pepper.
In a small saucepan, add the quinoa, stock cube and 400ml boiling water (some quinoa might need more/less time, check on the packet). Simmer until soft and translucent.
Add the quinoa to the vegetables. Roughly chop the coriander. Season more if necessary and add the coriander. Mix well, then cumble the feta on top and serve!
