Garlic & Herb Chicken

Ingredients:
2 chicken breasts
2 garlic cloves
Handful of fresh mint
Handful of fresh coriander
Salt and pepper
Half a red onion (I use the other half in a salad)
Method:
Thinly slice the onion. Finely chop the mint and coriander. Dice the chicken into roughly 3cm x 3cm chunks.
On a medium heat, crush the garlic into a large saucepan and add in the onion and herbs with 1 TBsp oil. Fry on a low heat for 1 minute.
Add the chicken and allow it sizzle. Turn to a medium heat and fry for 2-3 minutes. Season well with salt and pepper.
Add a splash of water and put a lid (or foil) over it. Cook for another 3-4 minutes until the chicken is firmer and fully cooked.
Serve immediately and top with any leftover herbs and onion and enjoy!
