Mushroom Soup

1 hour




4 garlic cloves

2 brown onions

2 boxes of mushrooms (roughly 20 medium mushrooms)

Salt and pepper

2 vegetable stock cubes

800ml boiling water

300ml non-dairy milk (OR normal milk if you're not vegan)


Crush the garlic cloves. Dice the onions. Wash and then roughly chop the mushrooms into quarters. In a deep saucepan, add all 3 vegetables to some oil and 50ml water and fry for 10 minutes. 

Generously season with salt and pepper. Add the boiling water and stock cubes and simmer for 20 minutes.

Add the milk and simmer for 10 minutes. Season more if necessary.

Remove from the heat and blend using a hand-held blender until smooth. Enjoy!
