Time Taken:

30 minutes




500g frozen peas

Large handful of fresh mint

2 medium brown onions

Salt & pepper

750ml boiling water

2 vegetable stock cubes


Dice the onion. Add to a large saucepan with some oil. Fry on a low heat for 6-8 minutes until soft.

Remove the mint leaves from the stems then roughly chop the leaves.

Add the boiling water, stock cubes and mint leaves. Simmer for 5 minutes. 

Add the frozen peas, season well with salt and pepper, then simmer for 10 minutes.

Blend until smooth and enjoy!
