Spiced Vegetable Cous Cous

Ingredients:
2 garlic cloves
1 brown onion
2 red onions
15 cherry tomatoes
2 beetroot balls
100g feta cheese
200g dried cous cous
Half a Tsp cumin
Half a Tsp paprika
Salt and pepper
400ml boiling water
Method:
Crush the garlic. Dice the onions. Quarter the tomatoes. Add all to a saucepan (not a frying pan) with a drizzle of oil and 2 TBp water. Fry on a low heat for 5 minutes.
Add the cumin, paprika and generous pinches of salt and pepper. Fry for another 5 minutes until soft.
Dice the beetroot.
Add the cous cous and boiling water to the pan. On a very low heat, simmer for 5 minutes until the cous cous is soft. Stir with a fork to fluff it up.
Remove the cous cous from the heat, top with the diced beetroot and crumbled feta and serve!
