Method
500g beef mince
1 tin of chopped tomatoes
500g tomato passata (approx)
1 and a half onion
2 garlic cloves, crushed
3 TBsp tomato ketchup
300ml water
2 Tsp salt
1 Tsp pepper
Handful of parsley
For the meatballs, finely chop the onion and parsley.
Using your hands, in a bowl mix in the beef, 1 onion, parsley, salt and pepper.
Roll into balls and then roll lightly in plain flour.
On a medium heat, fry the meatballs in oil until browned (they don't need to be fully cooked at this point). Set aside.
For the sauce, fry the garlic and a half onion for about 7 minutes until soft.
Add the chopped tomatoes, water, ketchup, passata, salt and pepper. Simmer for 15 minutes.
Add the chopped parsley and meatballs. Simmer for another 10 minutes until cooked through. Enjoy!
