Ingredients:

2 medium apples (I used jazz apples)
1 sheet of shop-bought puff pastry
3 Tsp cinnamon
60g light brown sugar
1 egg

Method:

Preheat the oven to 200°C.

Grate the apple onto a clean tea towel. Press another tea towel on top to soak up as much liquid as possible from the apple (kitchen paper also works well but is less sustainable).

In a small bowl, mix the sugar and cinnamon together. Beat the egg.

Roll out the pastry onto a baking tray, keeping it on the provided baking parchment. Spread a light coating of the egg over the pastry (if you don't have a pastry brush, just use your fingers).

Spread over half the sugar mixture. Then spread over all the grated apple. Spread the rest of the sugar mixture for the final layer.

Starting at the short end, roll up the pastry quite tightly.

Using a sharp knife, cut into 1.5cm slices.

Lay the slices onto the baking tray and spread over the egg mix on each swirl.

Bake for about 20 minutes until golden and browned.

Remove from the oven, top with sieved icing sugar and enjoy!
