Bacon & Cream Cheese Pancakes
3 rasher of diced bacon OR 150g bacon lardons
3 TBsp cream cheese/mascarpone
Maple/golden syrup for drizzling
200g plain flour
2 Tsp sugar
1 Tsp baking powder
Beat together flour, egg, milk, baking powder and sugar until smooth.
On a low-medium heat, melt 1 Tsp butter and pour mixture into circles (roughly 8cm diameter). When the pancakes bubble and are golden on one side, flip them and fry for another 2 minutes.
Remove the cooked pancakes. pour another set of pancake circles and add bacon.
Pile the pancakes on top of one another. Add the bacon, spoon on the cream cheese, drizzle with syrup and enjoy!
