Ingredients:

1 ripe banana
2 slices of bread (thick bread is best)
2 eggs (beaten)
3 TBsp milk
Small pinch of salt
1 Tsp cinnamon
3 TBsp butter
2 TBsp light brown sugar
Icing sugar to sprinkle on top

Method:

In a baking dish, add the eggs, milk, salt and cinnamon. Mix well.

Cut the bread slices in half. Add them to the egg mixture and soak on each side for 1 minute.

Chop the banana into slices or cut length-ways.

To a large saucepan, add 1 TBsp butter. When it bubbles, add the soaked bread. Fry on low heat each side for 1-2 minutes until golden brown. Set aside onto a plate.

Quickly add 2 TBsp butter and the light brown sugar to the pan. Fry on low heat until dissolved. Add the bananas and turn to high heat for 5 minutes until golden brown.

Top the toast with the bananas and icing sugar and enjoy!
