Super-Soft Banana Pancakes

Ingredients:
1 large ripe banana
2 eggs
Small pinch of baking powder
3 TBsp plain flour
Half Tsp cinnamon (optional)
1 TBsp sugar
Toppings - banana/blackberry jam/golden syrup
Method:
Mash large banana.
Beat the eggs.
Mix the banana and eggs together with the flour, sugar, baking powder and cinnamon.
On a very low heat, start to fry the pancakes in butter.
When lightly browned (after around 3 minutes), flip over and fry for 30 seconds. Repeat until all the mixture is used up.
Pile up the pancakes and add the toppings alongside, enjoy!
