Ultimate Leftovers Cake
220g self-raising flour
220g caster sugar
1 Tsp baking powder
2 Tsp vanilla essence
My added leftovers:
Half a tin of tinned fruit
Chocolate and peanut butter (for topping)
Preheat 170°C. Beat the butter and sugar together in a large mixing bowl. Beat the eggs in a small bowl.
Sieve the flour and baking powder into the mixing bowl, alternating with the egg mixture until all mixed.
Chop the tinned fruit into small pieces. Toss the chopped chocolate, blueberries and tinned fruit in some flour (stops them sinking when cooking). Add all to the cake batter and fold carefully until mixed through.
Pour into a lined loaf tin. Bake for 30-35 minutes until golden brown and cooked through and serve! (Depending on what you add as "leftovers", the cooking time will vary.)
