Welsh Cakes

2 eggs
450g plain flour
115g lard
115g butter
190g caster sugar
1 Tsp all spice
1 Tsp baking powder
120g sultanas/raisins
Pinch of salt
1 TBsp milk


Mix the flour, baking powder, salt and all spice together. Rub in the butter and lard until crumb-like.

Add the sugar and sultanas/raisins.

Add the eggs and milk to form a ball.

Roll out on a floured surface until 1cm thick.

Fry in butter on a low heat for around 5 minutes until golden. Flip and cook for a further 3 minutes. They should be firm to the touch when cooked through.

Dip into caster sugar until covered on both sides and enjoy!
