Zingy Lemon Mousse
150ml double cream
1 TBsp sugar
2 heaped TBsp lemon curd
For an extra quick method, use readily whipped/squirty cream.
Toppings - raspberries/pomegranate seeds/etc.
Whip cream and sugar together until peaks can be formed.
In a bowl, create a layer of cream then of lemon curd then of fruit (any leftover fruit you may have).
Repeat the layers and serve!
